Ingredients
8 Egg Whites
1/2 fat free half and half
2 t. Herbes de Provence
1 Bunch Asparagus
Pinch salt and Pepper
2 T. Parmesan Cheese
Instructions
I use egg whites in any and all dishes that call for eggs. I have taste tested each dish, side by side, with the same recipe made with the entire egg and couldn’t taste the difference. If I did, the recipe wouldn’t make the site.
Steam asparagus spears for 2 minutes, then plunge in cold water and drain. Cut asparagus into pieces and set aside. Combine egg whites with nonfat half and half. Preheat broiler. Coat a medium nonstick skillet with cooking spray and heat on medium. Add asparagus pieces, immediately followed by egg mixture. Cook frittata gently for five minutes, or until edges begin to set. Sprinkle a bit of parmesan cheese on top. Broil 2-3 minutes until eggs are set and cheese is golden on top.
