I believe there is no better salsa on the planet than Herdez Salsa Verde, hands down. At $1.79 for 16 oz., and only 5 calories per serving, go ahead and over endulge!

Chicken Enchiladas Verde

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 8

Serving Size: 2

Chicken Enchiladas Verde

Ingredients

2 c. shredded chicken breast
1/2 c. green salsa
1/4 c. green onions
2 T. diced ortega chiles
8 corn tortillas
2 T. chopped cilantro
Fage yogurt
2 T. lowfat shredded jack cheese

Instructions

Shred chicken breasts, add 1/2 cup green salsa, sliced green onions and cilantro into a medium bowl.
Mix until well blended.
Spoon 1/4 cup of mixture into each tortilla and roll each one tightly.
Place side by side in casserole. Pour remaining green salsa over top of enchiladas.
Cover casserole with tin foil.
Bake at 350 degrees for about 20 min. Remove from oven and sprinkle with shredded cheese. Return to oven uncovered just long enough for cheese to melt. Garnish with a dollop of Fage yogurt, and a pinch of chopped cilantro.
